For English-language texts try this:

mediatype:(texts) AND (language:eng OR language:English OR language:Eng) AND search string

It won't be perfect but should narrow it down considerably. Some books don't have the language field set, so it will miss some.

For type of document (RTF,DOC), I believe it's the format field. So something like format:(EPUB) would pick up .epub's , but again, it may not be perfect because not every document will have the field set. I'm not sure what the code's are for RTF/DOC/ODF .. check the metadata of some examples and see what the format field is set to.
