you can delete and add files. follow this clickpath from the item page:
Edit item > change the files > select a file, right click and select delete > add files by clicking the "Share" button > select files and click "Open" > Click "Update" when you are done.

Yes, I know the steps but, the problem that when I click on Edit item, I see this message "Item does not have metadata."
So, I can't add or edit any files.

And as I said I'm not able to duplicate that problem. Try logging out and logging in, clear your cache and try again please.
